Chicken Fettuccine Alfredo

When my husband and I were dating he fooled me into thinking he could cook! Clearly he was looking for a wife with one recipe under his belt. Chicken Fettuccine Alfredo.

Obviously you can boil some noodles and pour out a jar over the noodles. But what is the fun in that?

Here is a good recipe to make this simple box and jar recipe a little more special and a little healthier than it is in a restaurant.

Ingredients:

  • 3/4 lb noodles (fettuccine or spaghetti work best)
  • 1 bell pepper (I like to use a few different colors)
  • 2 chicken breasts
  • grill seasoning
  • 3 tbsp butter
  • 3 tbsp flour
  • 3 cups milk
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp pepper
  • dash of paprika

Directions:

Pat the chicken dry, season liberally with grill seasoning. Pre-heat a pan to med-med high heat. Add olive oil to the pan then add the chicken breasts and cover. Turn the chicken halfway through cooking. Place the chicken on a cutting board and allow to rest for 3-5 minutes.

Boil the noodles in a pot of water with salt until tender. Drain the noodles when cooked to taste and drain. In the noodle pot melt the butter and whisk in the flour. Once combined whisk in the milk (Find more detailed instructions here). Bring to a boil stirring constantly until thickened. Take the heat to med-low. Add the salt, pepper, onion powder, garlic powder, and paprika.

Dice the bell pepper and add to the pan that the chicken was cooked in. Saute until softened.

Slice the chicken. Add the chicken, noodles, and the bell peppers to the sauce and toss gently.

I like to serve with caesar salad.
