Recipe: Bacon and Broccoli Penne

I have been using a lot of bacon lately. I am not sure why. I hated bacon before I had kids. Post pregnancies I like root beer, mushrooms, and bacon. Strange.

We came home today exhausted from the holiday weekend. I knew I needed to make dinner but I wanted something simple. There was no meat defrosted, except some leftover bacon.

Ingredients:

1lb penne
1/2 lb bacon
2 cups frozen broccoli florets
3 cloves minced garlic
1/4 onion, chopped
1 cup chicken broth
1/4 tsp salt
1/4 tsp pepper
2 tbsp olive oil
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 cup frozen peas
1/2 cup grated parmesean

What to do:

Cook the bacon. Boil the noodles. Add the broccoli to the noodles just before done cooking and drain in a colander after a few minutes. Take the pot that the noodles and broccoli was in and add the olive oil, onion, minced garlic and saute until the onion is soft. Add spices and chicken broth, stir. Add noodles. Chop the bacon and add to the noodles along with the parmesean and peas. Stir to combine and enjoy.

Husband loved it! I also enjoyed. The kids didn’t eat much but I don’t think it was the fault of the dinner.
